- 1 cup yellow cornmeal
- 1 cup all-purpose flour
- ¼ cup granulated sugar
- 1 tbsp baking powder
- ½ tsp salt
- 1 cup buttermilk
- 2 large eggs
- ¼ cup melted butter
- ¼ cup honey (optional)
Instructions
Step 1 – Preheat oven
Preheat oven to 400°F. Grease an 8×8 baking pan or cast iron skillet.
Step 2 – Mix dry ingredients
In a large bowl, whisk cornmeal, flour, sugar, baking powder, and salt.
Step 3 – Mix wet ingredients
In another bowl, whisk buttermilk, eggs, melted butter, and honey (if using).
Step 4 – Combine
Pour wet ingredients into dry ingredients. Stir until just combined. Do not overmix. Batter will be slightly lumpy.
Step 5 – Bake
Pour batter into prepared pan. Spread evenly. Bake for 20–25 minutes until golden brown and a toothpick comes out clean.
Step 6 – Cool and serve
Let cool in pan for 10 minutes. Slice and serve warm with butter.

Heat your cast iron skillet in the oven before adding batter. This creates a crispy golden crust.
