Ingredients
For Crust:

1 pre-made pie crust (or homemade)
For Lemon Filling:

1 cup sugar

¼ cup cornstarch

⅛ tsp salt

1 ½ cups water

3 egg yolks

2 tbsp lemon zest
-
½ cup lemon juice
-
2 tbsp butter
For Meringue:
-
3 egg whites
-
¼ tsp cream of tartar
-
6 tbsp sugar
Instructions
Step 1 – Bake crust
Preheat oven to 375°F. Bake pie crust for 10 minutes. Set aside.
Step 2 – Make lemon filling
In a pan, mix sugar, cornstarch, and salt. Add water. Cook on medium heat until thick. Remove from heat. Stir some hot mixture into egg yolks, then pour back into pan. Cook 2 more minutes. Add lemon zest, lemon juice, and butter.
Step 3 – Make meringue
Beat egg whites with cream of tartar until foamy. Add sugar slowly. Beat until stiff peaks form.
Step 4 – Assemble
Pour lemon filling into crust. Spread meringue on top, sealing edges.
Step 5 – Bake
Bake at 350°F for 10–12 minutes until meringue is golden.
Step 6 – Cool
Cool completely before serving.
