Ingredients
For the Cake:

1 box yellow cake mix

1 box vanilla instant pudding mix (3.4 oz)

4 large eggs

¾ cup vegetable oil

¾ cup water

½ cup sour cream
For the Filling:

8 oz cream cheese, softened

1 cup powdered sugar
-
1 tsp vanilla extract
-
1 cup shredded coconut
-
½ cup chopped pecans
For the Glaze:

1 cup powdered sugar
-
2 tbsp milk
-
½ tsp vanilla extract
Instructions
Step 1 – Preheat oven
Preheat oven to 350°F. Grease and flour a 9×13 baking pan.
Step 2 – Make cake batter
In a large bowl, mix cake mix, pudding mix, eggs, oil, water, and sour cream. Beat for 2 minutes until smooth.
Step 3 – Bake
Pour batter into prepared pan. Bake for 30–35 minutes until a toothpick comes out clean. Let cool completely.
Step 4 – Make filling
In a bowl, beat cream cheese, powdered sugar, and vanilla until smooth. Fold in coconut and pecans.
Step 5 – Fill the cake
Once cake is cool, cut it horizontally into two layers. Remove the top layer carefully. Spread the cream cheese filling over the bottom layer. Place the top layer back on.
Step 6 – Make glaze
In a small bowl, whisk powdered sugar, milk, and vanilla until smooth.
Step 7 – Glaze and serve
Drizzle glaze over the top of the cake. Let it set for 10 minutes. Slice and serve.
Pro Tip
Chill the cake for 1 hour before cutting. It makes slicing into layers much easier.
